Gilman Brewing Santa Cruz Taproom Brewpub Gastropub Restaurant
About This Spot
Stepping into Gilman Brewing’s Santa Cruz Taproom feels like settling into a familiar neighborhood spot where the rhythm of the day slows just enough to savor simple pleasures. The spacious interior invites with its casual, unhurried vibe—where conversation flows easily over shared plates and glasses, and the clinking of glasses blends with quiet laughter. Although tucked beside the everyday bustle of Soquel Avenue, a secret side patio offers an unexpected outdoor retreat, a little tucked-away nook where the local pulse feels a bit softer and more relaxed.
At Gilman Brewing, the atmosphere balances the energy of a lively gastropub with the warmth of a community gathering place. Whether you’re drawn in by the inviting wood-fired pizzas crafted with care or the thoughtfully brewed IPAs that seem to capture something uniquely local, the fare never feels rushed or overdone. It’s the kind of spot where the food and drink complement the easy company and unpretentious setting, each bite and sip inviting you to pause and enjoy the moment.
The true charm here lies in how the place reveals itself gradually—whether that’s discovering the crisp pull of a refreshing hard cider, the rich earthiness of a wild mushroom pizza, or savoring a flight of beers that tell a small story of craft and creativity. Service here carries a friendly, laid-back tone that makes it feel less like dining out and more like catching up with neighbors, sharing in something familiar yet thoughtfully made.
For anyone curious about an authentic corner of Santa Cruz where good brews and well-crafted food meet a quietly vibrant neighborhood energy, Gilman Brewing’s taproom offers a genuine pause—an invitation to linger, explore, and feel at ease.

Well it was a new place so had to try. Service was very nice people. Seating in side was plenty. Was not till later saw the side outside seating which might have been a little more fun even though your view is a car dealership. Food was ok. Fries were good, little pricey. Pizza had a good crust but fir the price only 5 shrimp on whole pizza. The pepperoni one was very greasy. Ok the beer, oh no. I did 2 + flights with my friends of all different ones. I only could drink 2 out of 15. Not sure if they make there. It might help if they put a discussion of the taste or type of beer besides just the name. Interesting names- frog on a bicycle, dad's pants, swamp and others tell it all. Sorry. Ok update it's been a while so 8 decided to try again. Staff as always was really personable. Had a dark beer Fell on Black that was really good. We had the smash burger and another special burger time. Both were good , smash was better. Thank you Aaron and Coa!

Wild Mushroom pizza was uniquely delicious, with crispy fries as a side. We also enjoyed the hard cider and kombucha. Excellent, local laid back service.

This place is great! The best IPAs I’ve had in like a 25 miles radius! (Ok there is one other brewery within the radius also with great beers if you want to get technical, but anyways…) If you do a tiny tiny amount of sleuthing, you can find the “secret” corner that takes you the more inviting outdoor seating area!!

The food, beer and the environment are all excellent! If you want a great neighborhood vibe and no wait time, this is your spot. Chef Jeremy does a crust in the pizza you don’t wanna miss!

This is the best beer I've had in Santa Cruz, bar none. I'd say it rivals many more well known breweries in terms of both creativity and execution. The food is also great. The Nashville hot sandwich is about as close to perfect as I've had. The truffle fries beg for a good aoili to pair with, but I find it hard to complain with their flavor. Highly recommend Fuzzy Dice IPA for it's clean, dry hops and orange zest finish.

I had lunch here a group of 8. Its not a big menu but the pizza is very tasty and the crust perfect.
